Healthy & Delicious Recipe Ideas
A healthy meal doesn't have to mean a compromise on taste. Does the word tofu make you back away slowly? Do lentils fill you with dread? If you know what to do with them, these ingredients can be the star of a delicious and nutritious meal.
Here's one I made earlier:
1 block tofu (firm) c. 225g
1 tbs Soy Sauce
1tsp Curry paste (more if you like it hot)
1 cup flour
3/4 cup milk
1 tsp baking powder
Mix together the Soy, seasonings and curry paste. Cut the tofu into small cubes and marinade in the mixture for at least 30 mins. Whisk the egg, flour, milk and baking powder to make a a thick batter.
Lift the cubes out of the marinade, coat them in the batter and shallow fry them in a heavy based pan with some olive oil. Do not be tempted to move them until they are well set. Then turn over to cook the other side. Don't worry if some of the batter slides off. It will be lovely and crunchy. Serve with a rice, baked potatoes or cous cous. Alternatively you can cut out the batter and add the marinated cubes to a salad or eat them in a pitta.
